Hi Deanna and Newell, Sorry it took me so long to reply! Every time I jump on to reply, I never get to finish because Drew needs me! There are numerous ways to make them, but the way I make them is using the aunt Jemima whole wheat pancake mix (I normally try to make all of Drew's things from scratch but I don't have a problem with any of the ingredients in the mix-there isn't any partially hydrogenated oils or anything). I add about 1/4 cup to 1/2 cup of pureed sweet potato and a dash of cinnamon per batch. If they are too thick after you add the sweet potato just add a touch more milk. If you want to make them from scratch there are a lot of recipes on allrecipes.com that I'm sure would be great. To bake the sweet potato I just poke holes, wrap in foil and bake in a 400 degree over for about 30 minutes. Hope this helps! ETA: when I puree the sweet potato I usually add some water to thin it out some, I usually like it the consistency of thick applesauce. I use a food processor but I'm sure a blender would also do the trick. Lara
