What does this have to do with alcohol?

Well, I know when I first quit drinking....I didn't know how to eat (guess I still don't eat right) AND I started to eat 3 meals for the first time in a very long time.  And...I ran out of ideas...so here you go.

So...I thought I would share a recipe that was really good that I made tonight.

Meatloaf - stuffed with bacon and shrededd (white chedder cheese)...Yummy!

Make your meatloaf mix.....eggs, sauteed peppers, onions, garlic and 1/2 cup breadcrumbs...mix into hamburg...and then flatten hamburg on piece of foil or wax paper....put bacon and cheese in the middle...start pulling the foil or wax paper up (as to roll the meatloaf)....and then take over on your own...stuffing the edges so the cheese doesn't fall out...bake an hour...delicious with mashed potatoes...

...hey, I just thought of my "mexican" rice...I craved it when I was sobering up and my boys (and, husband) like it too...

6 strips of diced bacon
1 medium diced onion
crushed, minced garlic (however much you'd like)
2 cups of instant rice
1 can of tomato and rice soup (or, just tomato if you can't find the tomato/rice)
1 cup of salsa (mild/medium/hot...whichever...)
2 cups of chicken stock (or, water)

saute the bacon, onion, and garlic...until bacon has a cooked, but not crisp appearance...add in rice...saute for 3 minutes while stirring constantly...in a casserole dish...mix the rice/bacon with remaining ingredients, cover and bake at 375 for 30 minutes...uncover and cook an additional 20 minutes...love this...you can tweak it to lower fat and sodium as you need...

Hi - I don't know if you tried it....it was good.

I can't try the recipe with salsa in it because I don't like mexican stuff....throw another receipe out there thou.
