...hey, I just thought of my "mexican" rice...I craved it when I was sobering up and my boys (and, husband) like it too...
6 strips of diced bacon
1 medium diced onion
crushed, minced garlic (however much you'd like)
2 cups of instant rice
1 can of tomato and rice soup (or, just tomato if you can't find the tomato/rice)
1 cup of salsa (mild/medium/hot...whichever...)
2 cups of chicken stock (or, water)
saute the bacon, onion, and garlic...until bacon has a cooked, but not crisp appearance...add in rice...saute for 3 minutes while stirring constantly...in a casserole dish...mix the rice/bacon with remaining ingredients, cover and bake at 375 for 30 minutes...uncover and cook an additional 20 minutes...love this...you can tweak it to lower fat and sodium as you need...
