Breakfast has become the most unplanned meal for me. First, I stay on the computer way too long drinking tea, then need something quick to fix. Second, I'm so lazy that the thought of cooking & cleaning bowls & pans is overwhelming this early in the day. But - on the trip out West I found steel cut oats on every buffet, along with dried fruit and really liked it. So, I bought some yesterday, used the overnight soak method for a big batch in the Dutch oven, then finished the cooking this morning. I'll add a few dried cranberries, some dry milk for protein, Stevia sweetener and will be enjoying it shortly. The rest will be in a bowl in the fridge waiting for a quick reheat.

My alternate is cottage cheese with frozen blueberries, so hope I can get the days off to a better start.

Hi....My breakfast lately has been 1 piece of low cal toast/butter/peanut butter/1/2 a banana and a low fat yogurt...love it! Hugs, Ruth

I've heard Dr. Oz talk about the Steel Cut oats - he eats them every morning.
I want to hear back from you in a few days to see how you're enjoying them.  I'm wondering if the fiber will bother you. ????

Deb,
I ate them whenever the breakfast buffet had them out on my recent trip. As I eat regular oatmeal at home, the steel cut oat fiber doesn't bother me. What I like best is the chewy texture - takes a while to eat a bowl and gives my stomach a chance to tell the brain it's full. I'm thinking this could become a comfort food for snacks too.

The buffet cook told me they used the partial prep method, as it takes a while to cook. This means bringing 4 cups of water to a boil in a big pot (my heavy dutch oven was perfect), add 1 cup of dry oats, bring to boil, turn off heat & cover. Let sit overnight, cook for 10 minutes in the morning.

Lately I've been eating sauted mushrooms with southwestern eggbeaters (1/4 cup) and I put hot sauce and black pepper on the mushrooms while they are browning up.  I enjoy this quite a bit; as I think my brain thinks the mushrooms are some kind of meat source and I feel very satisfied until lunchtime. 

I've looked in my grocery and haven't come across the steel oats, I did read up on them when Carol posted about them, but haven't seen them, is their a brandname?

I do love dried cranberries.  I also have a juicer and when I get bored with eating I'll juice some carrots and a piece of an apple.  I save the pulp and make muffins or bread the next morning for the family.

I did find the dreamland pasta, Karen!  Finally!  Haven't tried it yet, but will let you know.
