Sugar Free Chocolate Fudge

Was going through some of my mom's diabetic recipes.  Found this one marked!  I haven't tried it but will closer to Christmas!  If anyone tries it sooner let us know what you think! 

2 packages (8 ounces each) cream cheese softened
2 squares (1 ounce each) unsweetened chocolate, melted and cooled
24 packets sweetner to equal 1 cup sugar
1 tsp vanilla
1/2 c chopped pecans

In a small mixing bowl, beat the cream cheese, chocolate, sweetner and vanilla until smooth.  Stir in pecans.  Pour into an 8 inch square baking pan lined with foil.  Cover and refrigerate overnight.  Cut into 16 squares.  Served chilled.  (16 servings)

3 fat exchanges
Serving size 1 square
calories: 147
carbs: 5 grams
protein: 3 grams

Be sure and give us a review when you do make it!  I'm thinking a person could easily play with it with different flavored extracts too.

mint extract would be awesome in this! Other nuts besides pecans would work, and even diced bits of dried fruits (dried cherries for instance) as well (except they'd add a bit more carb to the recipe)
