2 chicken breasts 1/2 C crumbled feta sliced olives, I used black olives 1/2 small can of sliced 1 medium sauteed red onion (I sauteed in oilive oil)
Sautee sliced onion in olive oil till soft, left cool
Make a pocket in each of the chicken breasts to hold the "stuffing"
Mix the onion, feta and olives together and stuff with the filling, spread some olive oil over the top of the breasts, sprinkle with either Mediterranean seasing or use just dried basil and oregano like I did. Also if ther eis leftover filling add to the top of the breasts after the seasoning.
I baked these in a 350 degree oven for 25 minutes. Enjoy.
Along with is I made a greek village salad
2 roma tomatoes chunked bite size pieces 1 green pepper chunked in bite size pieces about 1/4 c feta 1/2 small can of black olives drizzle of olive oil lemon juice to taste, I used about 2 tablespoons sprinkle with oregano and basil mix and put in refrigerator a while ENJOY
