my list is topped by nutritional yeast, different textures of tofu, and non-dairy milks (which almost don't count anymore since plenty of omnivores also drink them)

My list would include your list, but since there are now so many vegan substitutes for things (such as Earth Balance for butter and Veganaise for Mayonaise) I wouldn't know where to begin in listing them. Perhaps I would add Ener-G Egg Replacer and Better Than Milk (powdered milk).
Do you like Ener-G egg replacer? I've just started using it more because I'm almost out of flax seeds and haven't been able to get more yet. I tried a muffin recipe on the back of their box and was unimpressed; I made pancakes this morning and Finn complained they were "too fluffy." I need to look into Better than Milk. I've found I'm having problems with having enough non-dairy milks on hand both for drinking & cooking. Maybe Better than Milk would help.

Yes, I like it and have had good luck with my recipes. I'm sorry your muffins and pancakes did not turn out well. And just remember, Better Than Milk is a powder. I have used it to make my mocha mix, but have never used it in any other way so I can not vouch for it beyond the scope of my experience.
