That's a great question. I was just looking at this board to get ideas. My DIL is a Vegetarian, and I want to make it special for her. Advice really needed. Hugs, Lu :)
there's less a "traditional" Thanksgiving for vegetarians than a "what works for our family." Some people like to have faux turkey (I myself have never tried any of the brands available, nor made my own) or just had all the sides (fixed to be vegetarian or vegan, depending on the family's preference) or a casserole. It also depends on the family's health needs; I have low blood sugar so I must make sure to include a protein in my meal... too many traditional Thanksgiving sides are all starch and little-to-no protein so I'll often have a casserole that includes beans or grains for protein.

We traditionally have eggplant parmesian for Thanksgiving dinner. We had a tofuturkey once years ago and did not like it, so we are back to eggplant parmesian. :)
