Lunch is my worst meal of the day to try and think of something to have.
Breakfast is easy, cereal, and hubby cooks dinner every night. But I struggle with lunch everyday. It's too easy to throw a frozen pizza in the oven and then I feel guilty that I didn't eat something healthier. I made a big pot of black bean soup last week that I ate off for three days. What do you all eat for lunch that is different, creative and won't break the calorie bank?

Well, for lunch if I don't have leftovers, then I'll eat peanut butter & jelly sandwich.   But I have an outside job so I have to take something.   Dinner leftovers are great for that.  Or I may make pasta salads to take to work.  If nothing else at all, then it's a good ol' peanut butter & jelly.

Hubby always has to eat a PB&J on lightly toasted white bread and it HAS to be accompanied by chocolate milk.

Are you as picky about your PB&J?
