If you're done with Induction and looking for a tasty new recipe, give this one a try....it's yummy!
Here's how I made it:
I bought a side of frozen steelhead salmon filet (about 1.25 lbs) from Trader Joe's and defrosted it in the refrigerator. I cut the skin off from the back and cut it into three pieces (okay, I'm lying...my dh did that!). I mixed up a bit of salt, black pepper, and cayenne pepper and sprinkled it lightly on the fish.
Next, I chopped up some macadamia nuts in the food processor until the pieces were fairly small, but still crunchy (NOT dust!). Then I took some egg white and brushed it on each filet piece, covered it with the chopped macadamias and pressed them into the flesh as much as I could.
I then heated a frying pan with some canola oil (enough to cover the bottom of the pan) on a medium flame and put each filet, macadamia side down, into the hot oil. (Well, actually, my pan only fit two of the filets, so I had to do the third one after). After about 3 minutes, when the macadamias had gotten light brown, I flipped the filet over and cooked it for another 3 minutes on the other side.
Meanwhile, I preheated the oven to 400 degrees and melted some butter and coated the bottom of a baking dish with it. Once the both sides of the filets had been seared for 3 minutes, I transferred the filets into the baking dish and put it in the oven for about 5 minutes.
That's it! I served it with a Caesar salad on the side (romaine, Newman's Own Creamy Caesar dressing, a few squirts of lemon, some black olive halves, and some shredded parmesan/romano on top). Yummy meal!
BTW, in the interest of honesty, the recipe I used for the fish was mostly based on one I got from the Food Network website. The changes I made were using salmon instead of halibut and putting the melted butter in the baking dish.
