Warm Spinach with Prosciutto Crisps
Here's a recipe I tried last night, it was pretty good:
Warm Spinach with Prosciutto Crisps
(4 servings)
3 tablespoons olive oil
6 thin slices of prosciutto
1 garlic clove, minced
1 bag spinich
Juice from 1/2 lemon
2 tablespoons Romano cheese
salt and pepper
In a non stick pan over med heat, add 1 tablespoon of olive oil. Lay prosciutto into the pan and cook until crisp and transparent, about 1 minute. On each side drain on paper towel and set aside.
In a large saute pan over high heat, add the remaining olive oil and the garlic. Allow garlic to lightly brown. Add the spinach ant toss in the oil to coat and wilt gently, but do not overcook, about 2 minutes. Squeeze in lemon juice. Remove from heat and toss with cheese, salt and pepper. Garnish with prosciutto.
