I just cut up white or red potatoes, with skins on, into bite size pieces. In a bowl a mix my cream of chicken soup with hot water. I usually add some herbs for extra flavor. rosemary is my fav. Sometimes I add a splash or 2 of light ranch dressing or some peppercorn A1 sauce for a little kick or add some cheese on top after potatoes are done. I coat the potatoes with the sauce, add a bit of water if needed. Then bake at 350 for about 1-1.5 hours. You can use fiesta nacho cheese soup too, very yummy for cheesy potatoes.

My family is potato freaks!! I go through about 10 lbs. of potatoes each week. LOL
