Description
These healthy low-fat chips get a zesty kick from the addition of Italian seasoning. For "hot" chips, try Cajun seasoning or add minced garlic.

Ingredients
2 large sweet potatoes (2 pounds), sliced into 1/4" thick half-moons
2 teaspoons extra-virgin olive oil
1 tablespoon Italian seasoning
Salt
Freshly ground black pepper
Instructions
Heat the oven to 400°F.
In a large bowl, toss potatoes with oil, Italian seasoning, and a pinch of salt and pepper. Spread in a single layer on two large baking sheets and bake for 10 minutes. With a spatula, turn slices over and continue baking until chips are golden, about 7 minutes longer. Serve warm.
