Chicken Pinwheel Kabobs

I combined a few different recipes into a really yummy Chicken Kabob last night. It was a huge hit and only about 4.5 pts.

For each kabob you need:

1 4 oz boneless skinless chicken breast (3 pts)
1/2 tbsp Kraft Garlic and Herb Cream Cheese (.5 pts)
1 slice of prosciutto (1 pt)

Pound the chicken flat. Then spread on the cream cheese and top with prosciutto. Roll up and slice though to make 4 round 'pinwheels'. Thread onto skewers. Then I sprayed on a little oil oil so it wouldn't stick to the rack. You can either grill them or broil. I did them for about 15 minutes - turning half way through.

I think it would be good with some spinach added along with the prosciutto. It would look pretty with the green showing.

Yum!  That sounds pretty darn tasty indeed, and pretty enough for guests!  I'll have to remember that one, I do something very similar w/out the kabob sticks, but I think that if I did them that way and added little cherry tomatoes in between the chicken pinwheels (and added the spinach too), it'd be a really party hit!
