I'm determined to cut meat from one of our meals each week. Can anyone suggest favorite meatless meals that my husband and child won't cringe at?

TIA

red beans & rice, brown rice & lentil casserole, I just made mushroom barley soup, you can make white bean soup, veggie soup, eggplant parmigiana, eggplant or zucchini rolletes, baked ziti. The possibilities are endless. What types of things do they like & wouldn't cringe at?

There's a difference between interest and commitment. When you're interested in doing something, you do it only when it's convenient. When you're committed to something, you accept no excuses; only results.

I really want to do this too, but my husband objects to the idea. I remember seeing a promising cookbook that I wanted to get, but now I can't find it. When I can find it again, I'll post it for you. I think it was a soup book. That is a good way to skip the meat without it being missed too much.

There's some great vegetarian recipes right here at iVillage.

Perhaps you'll see something that might appeal to your family.
