I'm contemplating getting an organic turkey this year.  I'm sure it will cost more and I'm not even sure if I'll be able to find one here in my small town.

Has anyone ever had an organic thanksgiving?

We are doing an organic/local thanksgiving. All of the items on my Thanksgiving table will have either been grown by me - or come from within 100 miles :) My turkey will be organic - and not local though. We keep kosher - and I can't find a local/kosher turkey.

I'm doing a pretty traditional dinner...

Squash soup, Cider brined Turkey (with cider we pressed ourselves :), stuffing, cranberries, roasted root vegetables, lots of pickles and chutneys that I made.... I haven't quite nailed down all the recipes but I can share some if you want.

I'm pretty lucky to live in an area (Vermont) where we have a wide variety of local/organic foods available. We did a week long localvore challenge in September and it was really easy! We will be following the "Marco Polo" rules for our Thanksgiving feast - which means we can use salt, pepper, and other spices that would have survived a 6 month ocean journey. I love salt and can't imagine cooking a feast like that without it. I'll substitute maple syrup for sugar in all recipes. and use sunflower oil for all my oils...

Valerie,

Do you have Trader Joe's there? We can get kosher chicken and even kosher brisket there. I know they have kosher turkey breasts, not sure if they have whole kosher turkeys.

I absolutely love seedless kosher rye bread. My daughter was in Los Angeles last week and brought me home two loaves.
