Dh needs to cut a lot of fat out of his diet and I am having a hard time coming up with ideas of things to cook that will be healthy and kid-friendly.  Our boys won't eat salads and things like that, but they devour peas and carrots and all kinds of fruit.  The only meat they will eat is chicken nuggets.

Will they eat things like beans?  That would allow you to make things the whole family could eat together.  One thing I used to do when my kids were in that stage was cook "real" chicken for the adults, and pop a few nuggets in the oven for the kids; and then we all had the same veggies etc.  I'll have a look around and see what I can find the way of actual recipes though.  You might want to consider a vegetarian meal a couple of times a week as well - helps you cut down the fat and save money as well.  : )

Well looky here what I found!!  Maybe you could all enjoy some chicken nuggets - though you and your hubby might not want them every day.  ;o)

The secret to these chicken nuggets is that they're baked, not fried. Crispy on the outside yet succulent on the inside, these white meat chicken nuggets make a healthy fast-food alternative. Serve with ketchup, barbecue sauce or a fat free ranch dressing. Or simply combine a 1/4 cup of honey and a 1/4 cup of mustard for your very own honey-mustard sauce.

Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 1/4 cup flour
  • 1/4 tsp paprika
  • 1/4 tsp freshly ground black pepper
  • 1 egg white
  • 1/4 cup low fat buttermilk
  • 1 cup cornflakes, crushed

Preparation:

Preheat oven to 450 degrees. Coat a baking sheet with nonstick cooking spray.

Prepare three bowls: one with flour and seasonings, one with egg and buttermilk stirred together, and one with crushed cornflakes.

Cut chicken breasts into 1 to 1 1/2-inch pieces. Empty chicken pieces into bowl and roll in flour mixture. Then, piece by piece, and shaking off excess flour, dip the chicken into the milk mixture, then coat the pieces with cornflakes.

Place chicken on baking sheet and bake for 10 minutes until golden, turning them half way through.

Serves 4.

Per Serving: Calories 182, Calories from Fat 15, Total Fat 1.6g (sat 0.5g), Cholesterol 66mg, Sodium 178mg, Carbohydrate 12.9g, Fiber 0.4g, Protein 28.9g

The boys and I will eat beans, but dh is adamantly against them.  He says it is a texture thing.

Another low-fat chicken nugget/strip recipe.

This recipe is pretty much the same as above, but instead of making your own spice mix, you can use anything packaged to speed up the process, I use the Lipton Fiesta Red Pepper spice packet.  Also, instead of bread crumbs, I use crushed baked tortilla chips.  Just cut chicken into strips, dip in egg white, coat with a cushed chips mixed with the seasoning packet and put on a cookie sheet coated with Pam.  I spray the tops of the chicken stips with the fat free spray butter so they will brown in the oven; bake for 10 minutes.
