I love this recipe from Kraft food & family - it's easy, tasty, and reasonably healthy:

It is fairly heavy in sodium, but I think if you use your own seasonings like chili powder and such, rather than the taco seasoning mix, and use unflavored shredded cheese instead of the Mexican style cheese, you'll cut that down quite a bit.

Aargh.  I followed the link, and it says something about a server problem, to try again later!  I'll check it out later; but I love foil-pack dinners in general, so it's gotta be good, right?  ;o)    I wouldn't have thought you could use cheese in one though - or is it added later?
