Healthier sweet potato casserole?

I'm trying to make our Thanksgiving feast a bit healthier and could use some help on the sweet potato casserole.  I want to make it yummy but don't want to slather it in mini marshmallows either. Any advice?

I've tried sweet potato casserole once or twice - my former sister-in-law lived in the States for quite a few years, and so she used to bring it to family dinners - and to me, it's just waay too sweet anyway.  I would just pick under the marshmallows to get to the sweet potato!

To me, the best way to prepare them is to just boil, steam or bake the sweet potatoes, and then mash them - if you like more sweetness, maybe add some Splenda, or a little brown sugar.

I also have a recipe at home for sweet potatoes in fresh orange and lime juices that's really good - I could post that for you later if you like.  Sweet potatoes are also good with more savory type spices - garlic, paprika, cayenne pepper - that sort of thing.

I guess what you can do is more or less limited by how well it would be accepted by the people you're feeding.  Are they likely to rebel if they don't get their traditional casserole?

I use the sweet potato casserole from Eating Well Magazine (www.eatingwell.com). Its healthy and no marshmallows in sight! Its also delicious.

Although this is not healthier, when I saw it I thought of your post.

I'd never seen anything like this and thought it was quite different. I see that someone chimed in that as a twist they used canned sweet potatoes instead of the fresh.

Anyway, not healthy but a fun, creative side dish to make and they'd probably keep in a crockpot for a buffet.
