Calvert's Dilled Tomato Soup

6 tablespoons sweet butter
2 medium purple onions, peeled and sliced
1 quart fresh or canned chicken stock
2 cups fresh tomatoes, peeled, seeded, and diced
2 cloves garlic, minced
2 tablespoons fresh lemon juice
2 tablespoons Calvert's Cedar Street Dill Mustard
1 tablespoon horseradish
salt and pepper, to taste
2 teaspoons Worcestershire sauce

Serving: Serves: 8
Cook Time: 15 minutes
Total Time: 1 hour

Melt butter in a non-aluminum saucepan and sauté onions over medium heat until translucent (about 8 minutes). Add chicken stock, tomatoes, garlic and lemon juice. Heat to boiling. Lower heat and simmer for 1/2 hour. Add Calvert's Cedar Street Dill Mustard, horseradish and Worcestershire. Transfer in batches to blender or food processor fitted with a steel blade and process until pureed. A small sprig of fresh dill makes a lovely garnish.

Each serving: About 113 calories, 3 g protein, 4 g carbohydrate, 10 g total fat (6 g saturated), 24 mg cholesterol, 574 mg sodium.
