Carrot Cheddar Cookies
1-1/2 C. oats (quick or old-fashioned), uncooked
1 C. mild Cheddar cheese (4-oz), shredded
1 C. shredded carrots(or canned, no juice)
3/4 C. all-purpose flour
2/3 C. soft butter or margarine
1/3 C. firmly packed brown sugar
1 egg, beaten
1/2 C. small raisins or chopped dates
1 tsp. cinnamon
1 tsp. vanilla
1/2 tsp. salt
1/4 tsp. soda
1/8 tsp. cloves
Combine all ingredients and mix well. Drop by rounded tablespoons onto ungreased cookie sheet and flatten. Bake for 16 to 18 minutes at 350ºF. Store tightly covered.
