I think that the regular wedding gifts that people think of may still be appropriate, just make sure they are environmentally-friendly versions - made from sustainable sources and with green processes, things that will last a really long time, etc. Using your examples:
Towels - buy ones made from organically-grown cotton or hemp
Cookware - something that will last a lifetime. An enamel cast iron tea kettle comes to mind...oh wait, that's from MY wish list, sorry. ;) They might appreciate something like that though since it is a durable item that will basically never wear out, it is an environmentally-friendly item. When we got married, someone gave us a stainless steel soup pot with a copper bottom - I get more use out of that than anything else we got for our wedding. I literally use it at least once a week.
Another way to go would be to buy something used for them - antique stores and consignment places can have really good stuff, and because the things are used, they are very environmentally-friendly - the resources to make the items were used up long ago and by reusing/repurposing items, we avoid making new things and we also keep the old stuff out of the landfills.
Consumables are another way to go. Know of any wine clubs specializing in organically-produced wines? How about a basket of natural foods or a gift certificate to their favorite natural food store or organic restaurant? If they grow their own veggies, you could put together a collection of herloom variety seed packets and some hand tools for the garden. Throw in some kitchen towels made from oganically-grown cotton or hemp - I don't know about the rest of you, but IMO, people who give dishtowels as gifts have a special place in heaven.
