Dried veggies

I was recently given a second hand food dehydrater. After making the usual dried apples and a couple batches of dried pineapple I actually read the manuel.  An interesting idea came to mind.  Drying grated carrots celery and onions enables people with limited storage space to stock up and veggies to add to soups and stews without taking much space.  I also saw a recipe/ instructions for making tomato sauce that is then dried and pulverized in a blender until powdered. While this might not be the usual  method for storing sauce, once reconstituted it would serve in a pinch.  Little space need to store and might work out well for backpacking or camping.  I thought ideas like these were good ways to use the otherwise  surplus produce from the garden and enable people to eat local further into the year even they have limited storage space.

I have a dehydrator and I dry mushrooms, fruit leather, seeds and potpourri, fruits and veggies on sale. Your tomato sauce would be excellent for camping or backpacking....not much weight to it at all! The kids loved the fruit leather and I would use whatever was plentiful or selling cheaply to make it.

You DO save on storage space...and the end results are great for emergency kits, camping and home use. Great post trudy!!!
