I find myself cooking a one pot meal and eating 2-3 meals from that when I'm busy.

It saves time and stretches my food dollar plus just one pot to wash.

Do you have a favorite one pot meal?

Lately, I've been making a pot of chicken soup every week, since dh can eat that with no problem. I package some of it for the freezer, but then I also have chicken meat all cooked, and can pull it out and use it for other things. The broth can be used as a soup base or for cooking rice or other foods.

I have a problem with one pot meals as my husband doesn't really like them.  He WILL eat stew but doesn't really like it.  He doesn't like chili, soup, or most casseroles (except for a couple).  Last week I made a lovely stew from a new recipe.  It was delicious but he opted for some leftover salmon.  He did eat some of the stew the next day. 

I go ahead and make them, but I have to be ready to eat them several days in a row.  I love to make pinto beans with ham.  That was often served by my Mother and we all loved it.  I'd have to say that is a fave.  I also love homemade chicken noodle soup and chili.

That would make it hard, DH was like that sometimes. 

It made planning meals very difficult.

What else do you add to the pinto beans and ham?
