(sorry-I couldn't figure out a pre-determined category so carefully selected by Janet)

Ingredients:1 medium orange              2pds. peaches-peeled & pitted

                    1 medium lemon               7 1/2 cups sugar

                     1 cup water                     1/2 bottle liquid pectin

Method: Cut peaches into about 2" pieces 

Remove zest from lemon & orange with zester or vegetable peeler & cut the pieces of zest into about 1"-2" (long)pieces.

Put water, zest, juice of orange & lemon, peach pieces in a blender & blend until smooth.(I had to use my food processor since my blender died a horrible death a few years ago).

Pour into saucepan-3quart size-add sugar & bring to a boil, then cook for 10 min-stirring it frequently.Remove from the heat-add the pectin & put into sterilized jars immediately.Good on toast (or over ice cream)-a nice taste of summer all year long!

Makes about 4 pints.

Yummy sounding, Nora!  I bet it would be good on waffles, too.  The peaches are just getting ripe for picking in the orchard next to me -- I'm going to give this a try!
