I'm always on the lookout for both soups and slow cooker recipes and especially now with fall on its way.  Anyone have some good ones?  I have some good ones for potato soup and cheddar chowder.  I'm trying to find some good soup recipes that include barley -- anyone?  And slow cooker recipes that are pretty easy to throw together - my favorite is one with chicken, rice, sausage, green peppers, etc.  It seems like when I see a magazine with slow cooker recipes, they include really offbeat (to me) ingredients. 

Has anyone ever made pumpkin soup?  I've seen several recipes for that lately, but not sure if I would like it or not...

Janet, I have a recipe for Scotch Broth, but not sure if it would interest you, but it's (IMO) so tasty! It does include barley, but also traditionally it's made with lamb (but maybe it could work with beef..it just would taste different because lamb has distinctive taste). It also includes turnip (but I use the rutabaga - which in our house when I was growing up was known as 'turnip').

Another soup I make with barley is very simple and I don't have measurements for it, I just 'eyeball' how much to put of the vegetables. Essentially it's canned tomatoes (blended in a blender to make it smooth - I use the large cans of it) and you can add chicken broth or water or vegetable broth. I add carrots, celery, onion, all chopped as small as you wish and chopped garlic and dried oregano, and then I also add barley. I usually end up putting too much (probably 1/3 cup is enough for a large pot of soup?) as I love barley in soup. I cook it until the barley is tender (about 45 minutes). I sometimes add broccoli but that would be nearer to the end of the cooking time. You can add green beans too. I just put the vegetables I like.

Let me know if you'd like the Scotch Broth recipe. It's very hearty and it's really like a meal.

Thanks, Shirley!  I will surely try the second recipe and probably the first but without the lamb as I am not a fan of eating lamb.  I, too, love barley.  I have one recipe for a soup/stew dish that is called Pioneer Stew - a rather thick mixture of ground beef, barley, and various vegetables.  It makes a TON and I always end up freezing several quart jars afterwards.
