Beans!

Oh man, Heidi really wants to feed herself and I was looking for some inexpensive options. I found a really great 16 bean soup mix (Goya) and made up a pot. I just added some chicken broth, bay leaf, parsley, onion and a dash of garlic. She loves her bean soup because I can let her pick up the beans. I soaked them overnight so I did have some beans fall apart while cooking but all the beans are tender and she loves to eat them. This was one of the first time I cooked with dry beans and it was great!

Just thought I would pass along this tip.

Oh, and rotini pasta is another great finger food for us. I buy her this tri-color rotini called "Wacky Mac" and make her pasta servings. I spoon the pasta into muffin tins, top with sauce and cottage cheese. It makes a perfect serving. She will feed herself the pasta and scarfs the stuff down!

One more: mandarin oranges. My babe seems to love very flavorful things and loves these tangy oranges. They are super mushy and work well for us!

Thanks for the tips! Harrison is a fan of beans too. He loved black beans when he was younger so I used to make him black bean cakes for lunch. Yum.

He also really loves soup (or as he calls it boup). His favorite is pasta fagioli. I use cannelini beans, ditalini pasta, chicken broth, water, and crushed tomatoes. Sometimes I'll throw in some diced carrots,celery,or spinach.
