Your challenge this month, should you choose to accept it, is to incorporate a *soup night* into your menu plans each week and to share the recipes! Soups are a great way to stretch the grocery budget! And such a comfort food, imho, during the fall and winter!

Anyone with me on this one?

I love soups!  My lentil soup is well loved in our house, and I make a pretty good chicken soup too.

We have soup quite regular.   It's one way to stretch some meat out.  Like a roasted chicken from the store.  The carcass is simmered off for soup.  What schnibbles I get off it are for the soup.  Just some vegetables and rice, noodles or dumplings.  A good healthy meal.  Along with maybe a salad or a sandwich.  I've even taken bits of leftover pot roast.  Turned it in to beef barley soup.  It's a way to use up little bits of meat from other meals.
