I always preface any sleep advice I give with this: Ignore it because I have a horrible sleeper, or take it seriously because I have such a terrible sleeper that I have read every sleep book on the planet. : )
That said, some of the many books I have read have discussed that some kids, rather than give up the morning nap, will take the morning and then try to skip the afternoon. The problem you're running into is in all the books -- two naps are too much, one nap isn't enough. I think you're definitely OK to do a "catch up" day here or there, which is sort of a compromise. Give him two or three days with one nap, then a day with two naps, and keep an early bedtime. On days with one nap you can do an even earlier bedtime. We've done as early as 6 (from a normal of 7), and she will sleep to her normal time or even later in the morning.
The whole nap transition can take three weeks to two months, so you're still pretty early in the game.
