My Crockpot is my favorite Appliance (after my coffee pot...)  :-)

Pot Roast (the way my Mama makes it)

3-4# roast (boneless rump, shoulder or pot)
1 cup of coffee (morning leftovers are perfect)
2 cups hot water + 3 Chicken Boullion cubes (disolve the cubes in the water)
Garlic (if you have it)

Put everything in the crock pot cook on Low all day (6-8 hours). The 'juice' is a great start to some awesome gravy (to make gravy take 2 cups of the juice put in a pot, heat to boiling whisk in 1/4 c. flour, whisk constantly until it starts to thicken remove from heat).

I serve this with Rice and veggies.

PMS Cake

1 box chocolate cake mix (your favorite type)
1 small box regular Chocolate pudding (instant type)
4 eggs, beaten lightly
1 cup oil
1 container (8oz)  sour cream (not fat free, not low fat, the real stuff)
1 bag of semi-sweet chocolate chips (12 ozs.)

Mix together all the ingredients, Spray your crockpot with Pam (or grease it) Pour in batter and cook on low 6-8hours, or high 2-4 hours.

Serve hot with whipped cream or ice cream.

Jamaican me Crazy Chili

  • 1 1/2 pounds ground round (ground turkey can be used if you prefer)
  • 1 teaspoon olive oil
  • 1 1/2 cups chopped onion
  • 2 cloves garlic, crushed (I use more...like 4 cloves I love garlic)
  • 2 1/2 cups chopped yellow bell pepper (I use one green and one orange)
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 tablespoon chile powder
  • 2 teaspoons white sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 2 (14.5 ounce) cans stewed tomatoes
  • 1 (15 ounce) can kidney beans, drained
  • 1 (15 ounce) can black beans, drained
  • 1 (15 ounce) can cannellini beans
  • 1 (6 ounce) can tomato paste
  • 2 tablespoons balsamic vinegar
  • 1 12oz bottle good DARK Beer (amber boch, guiness)

Place ground round in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and put into crock pot. In the same skillet cook the onion and garlic in olive oil until the onion is tender. Add the yellow pepper, and cook until tender. Add to crock pot and then add in all the other ingredients EXCEPT the vinegar! Cook on Low for several hours (at least 4), Before serving stir in the balsamic vinegar. Serve hot.

you can top with fresh cilantro if you want (I don't) or with Cheese (YUM!). Corn bread is a must. :-)

    Super Easy Vegetable Soup

    1 large can V8

    2 can beef broth

    1 bag mixed vegetables

    2 potatoes, peeled and cubed

Place all ingredients in crockpot on low for 8 hours.

**  I like to cook up 1/2 bag of egg noodles and add to soup just before serving.
