8 month old feedings

My 8 month old is doing ok with solids but I still feel a little unsure about what I am doing. First off, here is her schedule:

8:30 am - 1/4 cup of baby cereal mixed with formula and 1/2-a whole jar of stage 2 fruit
10:00 am -6 oz. formula
12:00 pm- sometimes I feed her 1/2 jar of veggies and sometimes not. If not, I feed her a 6 oz. bottle of formula.
3:00pm- 6 oz. formula
5:00 pm- 1/4 cup of baby cereal and 1/2-a whole jar of veggies.
8:00 pm- 6 oz. formula

She usually wakes in the middle of the night for a 6 oz. feeding of formula as well. I haven't introduced meat yet mostly because the jars of baby food meat seems so gross. What is an easy way to feed meats? Is it best to homemake them? What about cheese and yogurt? My baby gags very easy. She oftens vomits when I try new foods especially if they are chunky in any way. Are there any suggestion for this? Feeding time seems stressful. She often is whining while I feed her. She eats the food but she always seems upset. I notice that she likes fruits much better than veggies. Can I feed more fruits for lunch and dinner or keep persisting the veggies? I haven't been consistent with lunch feeding because she dislikes it so much. Is this ok? I am not sure what to do about her fussiness while I feed her. I starting giving her a spoon to play with while I feed her and that seems to help. My final question is should I be trying more new foods? It seems like she has been eating the same things for a long time now but I am apprensive about trying new things because she gags and she seems so fussy.
