I thought it would be fun to start a thread with kid-friendly meals.  It could be a great starting point for someone looking for ideas on what to serve their families.  Please post the recipe if applicable!  :o)

My favorite recipe of all is our mac-n-cheez.  We eat this every week, typically on Monday night.  It makes great left-overs for lunches throughout the week so I like making it early on in the week.  I like adding a number of things to this dish to change it up - sometimes I use Rotel tomatoes or fresh tomatoes, sometimes BBQ sauce, sometimes salsa.....oh and sometimes just plain.  :o)  And I just started using "fun" pasta, I use mini-wagon wheels.  I think my DH was even more excited than my DD.  LOL

Macaroni and Cheez

 

1 pound macaroni

1 ¼ cup water

1 cup soymilk

¾ cup nutritional yeast

3 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon salt

½ teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon dry mustard

½ teaspoon smoked spanish paprika (I use regular paprika)

1/2 teaspoon turmeric

Pinch cayenne pepper

 

Blend all ingredients in blender while macaroni is cooking.  Drain pasta, add mixture, cooking until mixture boils and thickens.  You may need to add some of the pasta water.

I am going to try your recipe and see how it is. Right now I have about 6 vegan macaroni recipes and they are all different, so thanks for sharing!

But to add another kid-friendly meal - how about spaghetti and marinara sauce?

our big one is *baked potatoes* (in the microwave for 6 minutes) with nutritional yeast, vegan margarine, and minced garlic. Finn loves that he can make it all himself.

Mmm We used to do meals of baked potato with broccoli and cheese or veg chili and sour cream on top. Family fav for sure. Not happening anymore because white potatoes are totally out for me (and sweet potatoes have to be very limited) due to diabetes "if it's white, don't bite" (refers to flour, sugar, potatoes, rice, etc as a rule of thumb)
