It's hard to say what she will eat without knowing what she likes...but, maybe start thinking outside the bun so to speak - non-sandwich ideas. Try wraps instead of standard bread sandwiches. Will she eat egg salad? Cheeses - try some different cheeses besides that awful pre-sliced stuff - if you're going to get American, at least get the freshly sliced deli kind. Consider leaving the bread out and do cookie cutter slices of provolone or cheddar or whatever (slice the cheese a little thick then use mini cookie cutters to make shapes) along with favorite crackers and some cut up fruit or veggies, maybe a homemade (with her help) trail mix of dried fruit, nuts, and Sundrops (like M&Ms but organic, no artificial colorings) or chocolate chips (DS likes a mix of white and dark chocolate). Something DS found interesting for a while was cold cooked rice mixed with diced veg and bits of cream cheese (whatever - he liked it).
Oh, and don't forget a good thermos that can hold soups, stews, applesauce, yogurt, etc.
Then again, this is just off the top of my head guessing because we don't pack school lunches since DS is homeschooled - he just grabs whatever is handy in the kitchen.
