Julianna and I were talking in another thread about "Meatless Monday" at school and how we could do it at home as well. Anyone up for the challenge? You could do one meatless meal each Monday, shoot for the whole day, or just pack meatless meals for the kids. Any way you'd like to participate is good!

Dh threw a roast in the crock pot this morning, so I'm shooting for a "Mostly Meatless Monday" this time. :@)

This morning I had yogurt w/ granola, and I'm eating veggie soup for lunch.

We had vegetarian chili on Monday. I can't remember what I had for breakfast and lunch, though.

With the adjustment to 2 kids, I've had to make a weekly meal plan. I've decided to base it on a rough plan of chicken once a week, red meat once a week, beans once a week, vegetarian pasta once, eating at in-laws once (which we already do), leftovers once a week, and leave the 7th day flexible. That gives us at least 2 vegetarian nights a week, possibly 4. I'd like to eventually increase that until we're only eating meat once in a while.

OMG, I totally missed this thread! I'll start this Monday. I'll definitely go meatless for DDs lunch and try for dinner as well. DH is mostly a carnivore, so it's gonna be tough! :)

Love the new siggy Roma! Your kids are adorable!

I'm trying to limit red meat to once per week as well as it seems that's the most detrimental to the environment. I cooked a whole chicken last week for the first time and was surprised by how many meals we got from it. I made chicken enchiladas the first night, we had chicken burritos, then used the rest in hot and sour soup, plus we still have one portion in the freezer. And the chicken was only $3.27 USD. It definitely went a long way!
