Fave meals for making a dollar stretch?

I'm sure I'm not alone in saying the recent economy (and record-high gas prices last year) have put me in a bind, financially, so I'm always on the lookout for new recipes that are yummy but budget-friendly, too. There's always spaghetti, one of my go-to recipes, but there's a definite limit on how often I can get away with making that for dinner without hearing complaints from hubby and kids. What are your favorite "stretchy" meals?

Frito chili pie!! (  a can of chili a bag of  corn chips , shredded cheese and mustard!)

Salsa Chicken Casserole is good because you get it and another meal the next day too.

2 cups rice, cooked
1 can cream of chix soup + 1/2 can of water
1# Chicken, cooked and shredded
Salsa (14oz? jar...)
shredded cheese (cheddar- about 1 1/2 cups)

Mix together salsa, soup and 1/2 can of warm water. set aside.
Preheat oven to 350*
In a 13x9x2  layer, half chicken, half rice, half of the soup/salsa mixture and half of the cheese, repeat layers ending with cheese.

Bake for 25 minutes or until hot and bubbly and cheese is melted. 

With the leftovers (for a family of 4 there should be about half left) the next day, spoon casserole into tortilla's roll and place in a pan seam side down, fill pan, spread salsa over the top, sprinkle with cheese, Bake 25 minutes til hot.

It's cheap and easy and you get two meals out of it. :-)

I like whole roasted chickens - either DIY or rotisserie from the store, depending upon which ends up being cheaper per pound.  I serve the chicken with vegetable (carrots are cheap and filling, as my great grandma used to say) and either rice or mashed potato (if I made pan gravy).

I shred all leftover meat off the carcass and use it the next day in a pasta dish.  If I'm lazy, the gravy is the sauce; if not, I make a "white" sauce using olive oil, flour and chicken stock (boil the carcass with onion, celery top, and leftover pieces from prepping the carrots).

Can you hear those pennies scream?
