Freezing Meals

By the end of the day, the last thing I want to do is try to figure out what to make for dinner.  I often think about how wonderful it would be to have some meals already prepared and waiting to be warmed up.  I've read about people that take one day a month and prepare a bunch of meals and freeze them.  Do any of you do this?  If so, what do you make to freeze?

I've never froze a meal like that but my mom freezes chili and soup in small freezer containers.

right before (like 24 hours before) I went into labor with Valentine, I froze some lasagna in small loaf pans.  It re-heated awesome and I've been meaning to make more.  It was such a life saver during those first few weeks when you can't even find time to eat.

There's a lot of things you can freeze, lasagna, ziti, manicotti, enchiladas.  A lot of things that you would make in a 9x13 dish, I break up into 2 pans of 8x8, and I freeze it before cooking.   I'll do things such as cook chicken in a crock pot for several hours and then portion it out into freezer bags to use in recipes later on.  I also keep chopped green peppers, onions, etc in freezer.  If I make fahitas one night, I'll buy ingredients for 2 meals, slice up the meat, veggies etc and freeze for later use (without cooking it).  I but ground beef in bulk and freeze it so I always have it on hand.  I've even heard of people that will cook ground beef and then freeze it so all you have to do is add it to whatever you are making after thawing it out.

I'm never organized enough to spend a whole day cooking meals for later on that month, but I try to keep things on hand for easy meals.

Those are great ideas, Melissa.  Even having some of the chopping done before I start a meal would be helpful.  I don't know what it is but around the time I need to start cooking at night all the kids need/want my attention.  Saving any kind of time is helpful!
