Sue, will he drink smoothies? Fresh fruit, frozen yogurt and milk? Try some homemade granola bars -- you can control the amount of sweetners and fat you add - there are a ton of recipes out there.
Peanut butter, bananas and either whole grain crackers or toast.
Fruit slushies -- you freeze and blend the fruits together, add whole grain toast or buckwheat pancakes - Peanut butter is a favorite on pancakes here and has always been with a couple of the kids.
Make your own berry or fruit syrups or toppings. You can add spices and limit the amount of sweetner - and if the fruit is really ripe or sweet, you can generally get by without any additional sugar -- Unsweetened Applesauce is good too -- sprinkle with cinnamon for a little more taste.
Fruit crisps are great for breakfast -- just don't add all the sugar the recipe calls for. Use a little more cinnamon. Serve topped with a dab of Vanilla yogurt instead of whipped cream or ice cream.
Ask your ped about the number of eggs --- I have to limit myself to 2 a week. So I have one for a breakfast and use the other in cooking...
Make an omelet and fill with fruit or veggies and a bit of cheese and some turkey bacon. My kids always loved breakfast burritos (whole grain - and homemade). Make your own sausage using ground turkey or chicken and just add the seasonings. Make into patties or rolls or crumble and cook. You can add a tsp of shortening to the meat mixture for that little bit of fat taste.
