Recipes to freeze?

Hey everyone.

Well we have baby number two on the way and I was just thinking about how crazy it was when we brought my first son home from the hospital and the family was here to visit, it was just so busy!  This time around I want to be more prepared! We have no family in town to help out once everyone leaves so I was thinking this time around I would make a bunch of meals that I can freeze.  My plan last time was to do the same but I kept putting it off and it never got done.  I finally said “ok this weekend I’m going to do it” but I was already eight and a half months along and that was the last thing I wanted to do! 

This time, I was thinking I would do it early when my mom and sister are here to visit.  They are going to be here at the end of September.  I think you can freeze meals up to a year?? Right??  I’m looking for some good recipes that will freeze well and any tips on freezing too because I don’t do it often.  The things I do have on my list so far are; chili, this chicken stuffing casserole & homemade sauce (for quick pasta like spaghetti) any other great recipes would be great and like I mentioned before, any freezing tips!

I never head of freezing things for a year.  Anything I freeze over 3 months is usually a total lose and has to be tossed out because of freezer burn.  I never freeze anything as a result.  I still do have some meat from Easter in the freezer but I don't know if it's any good.  I'd say anything like already cooked meat would be ok for a few months.
