We are having all the family at our house this year. I will be cooking, but everyone pitches in. We don't have any special traditions, but I am going to try to make some side dishes that are not the usual (for our family) this year. My favorite is the turkey. I always order a free range one and use a brine. I LOVE fresh turkey :)

What is brine? I heard someone else last week say you just have to brine the turkey. I've never heard of it (but I'm not a big cook either).

Brine is a seasoning technique for poultry. It usually consists of salt and herbs. I always buy mine through Williams-Sonoma. You usually mix the brine with water and then soak the turkey in the brine mix in a large bag over 24 hours. It help the Turkey stay juicy while cooking and the herbs soak in really well. Hope this makes sense?

Thanks, that does make sense. Maybe I'll have to try that this year! I've made turkeys several times now and they've always been just good - nothing out of the ordinary or really delicious, kwim? I'll have to look into that some more.
