Tomato Bread

8 1/3 cups of flour
half a dice of yeast
1/2 cup of milk
8 medium sized tomatoes
3 teaspoons of salt
2 tablespoons of olive oil
1-2 teaspoons of dry basil

dice tomatoes and heat them up a little to soften. dissolve the yeast in 1/2 cup of milk. pour flour into a large bowl and add the milk/yeast mixture. Puree the tomatoes together with the basil, salt and oil. Mix with the flour/yeast/milk mixture. Dough will be pretty liquid! Let rise for 2 hours. put into cake pan and bake at 400 degrees for approx. an hour.

Tastes very yummy when served with cottage cheese, olives, feta cheese etc.

Aw, well.  I'm going to give it a try in the machine this weekend.  I'll post the results after the holiday!  I have a great recipe for pretzel bread that isn't for a bread machine, but works well that way too.  It's funny because that's the only thing DH requested for Father's Day ("When are you going to make me some pretzel bread???").  I can only do the dough in the machine since it has to be placed in boiling water with baking soda before baking.  This one does looks machine friendly.  If not, it looks good enough to try without the machine too!  I'm so excited!  Now I just need some tomatoes.  :)

Well, I tried it in a bread machine, and it turned out great!  I halved the recipe to make a 1.5 lb. loaf (next time I'll do the 2 lb. loaf since it was a little raw in the middle and had to go in the oven for 10 min.).  I also wound up adding a bit more flour and like 1-2T of water to get the consistency right.  I have no idea what a "dice of yeast" is (didn't think to ask here earlier, LOL!), so I just used a packet which is about 2T.  It was really good with fresh mozzarella on top!  A full recipe must make a huge amount of bread!

Everyone loved it.  Thanks for sharing!
