Thyme Chicken with Roasted Veggies

4 frozen boneless chicken breast fillets
baby red potatoes, quartered
onions, peeled and quartered
bell peppers, seeded and quartered
zucchini and/or summer squash, cut into large pieces

Preheat oven to 375 degrees.

Place all ingredients in a roasting pan. Sprinkle very liberally with olive oil, garlic salt, and thyme (extra on chicken). Bake for 1 hour.

(If chicken is thawed, cut potatoes smaller and cook for 40 minutes).

It's the "bake for 1 hour" part that messes me up.  I get home at nearly 7PM, and the kids start bedtime routine by 8:30.  An hour to make dinner is too long unless it's a weekend!

I'd bet that you could throw all that in the crock pot before work and be ready when you got home.... :)

The crockpot we got as a wedding gift has only two settings, for 3 or 8 hours. Doesn't work well for most recipes we have. It also seems to heat hotter than it should, scorches almost everything if you follow the recipe and directions. I've walked away from it in frustration for now.
